A Three-Course Seasonal Dinner with Optional Wine Pairings — Saturday, February 7, 2026
The Chef’s Tasting Menu is designed to reflect the season and the ingredients inspiring our kitchen that week. The menu changes every Saturday, is never repeated, and is served alongside our regular à la carte dinner menu. Guests may enjoy the tasting experience or order from the full menu — whichever feels right for the evening.
This week’s menu leans into late-winter cooking, balancing earthiness, richness, and brightness.
We begin with beet bruschetta, featuring roasted ruby beets layered with goat cheese and yogurt, served on toasted focaccia and finished with pomegranate molasses. It’s vibrant, fresh, and grounding all at once.
The second course features seared beef tenderloin, paired with a crisp hasselback Yukon potato, roasted pearl onions and carrots, sautéed spinach, and a classic cognac cream. A refined winter dish built on comfort and technique.
Dessert brings a luxurious finish with profiterole — a salted caramel choux bun filled with pear and hazelnut ice cream, finished with whipped ganache and vanilla cream.
Optional wine pairings are available with each course.

Our Chef’s Tasting Menu is completely optional and offered in addition to our regular à la carte dinner menu. Guests may choose the three-course tasting (with or without wine pairings) or order from the standard Table 128 menu — it’s entirely up to you.
