A Three-Course Seasonal Dinner with Optional Wine Pairings — Saturday, March 28, 2026

Each Saturday evening, Table 128 offers a Chef’s Tasting Menu, a three-course dining experience created by Chef Lynn Pritchard and the culinary team. The menu changes weekly and is designed around seasonal ingredients and the dishes inspiring the kitchen that week.

The tasting menu is served alongside our regular dinner menu, so guests may enjoy the three-course experience or order à la carte.

This week’s tasting leans into early spring — clean, vibrant flavors, balanced with richness and depth, highlighting both land and sea.

The evening begins with a classic carpaccio, featuring Snake River Farms beef tenderloin, layered with horseradish, lemon aioli, caper berries, shaved parmigiano, and extra virgin olive oil. Finished with crostini and garlic confit, it’s bright, savory, and elegantly composed.

The second course features pan-roasted driftless trout, served with a smooth pea purée, spring peas, and asparagus. Feta, horseradish, and Greek yogurt bring balance and texture to a dish that feels both fresh and comforting.

Dessert offers a rich Basque-style cheesecake, made with ricotta and cream, paired with raspberry, raspberry gel, vanilla Chantilly, and a delicate basil and mint tuile.

Optional wine pairings are available with each course.

What is the Chef’s Tasting Menu?

Our Chef’s Tasting Menu is completely optional and offered in addition to our regular à la carte dinner menu. Guests may choose the three-course tasting (with or without wine pairings) or order from the standard Table 128 menu — it’s entirely up to you.
