A Three-Course Seasonal Dinner with Optional Wine Pairings — Saturday, February 28, 2026
Each Saturday evening, Table 128 in Des Moines offers a Chef’s Tasting Menu — a three-course, one-night-only dining experience created by Chef Lynn Pritchard and the Table 128 culinary team.
The menu changes weekly, is never repeated, and is offered alongside our regular à la carte dinner menu. Guests may choose the tasting experience or order from the full menu — whichever feels right for the evening.
This week’s menu leans into refined winter flavors — bold, classic, and rooted in technique.
We begin with beef tartar, featuring hand-cut beef tenderloin dressed with whole grain mustard, horseradish, cornichon, truffle, and chive, served with crisp accompaniments. Clean, elegant, and deeply savory.
The second course features pan-roasted American red snapper, finished with lobster cream sauce and served with Yukon potato, carrots, and peas. Rich yet balanced — a nod to coastal comfort with classic French influence.
Dessert brings a dramatic close with a dark chocolate soufflé, made with single-origin chocolate and served with vanilla pastry cream and fresh berries.
Optional wine pairings are available with each course.

Our Chef’s Tasting Menu is completely optional and offered in addition to our regular à la carte dinner menu. Guests may choose the three-course tasting (with or without wine pairings) or order from the standard Table 128 menu — it’s entirely up to you.
